Easy Peasy Three Step Chicken

I have the worst imagination when it comes to dinner, plus I don't like to cook!!
When I was in Starbucks yesterday, they had a free iBook download for "Quick & Easy Recipes 1-2-3" by Roxanne Gold.  Did someone say "quick and easy"??  Right up my alley!! 


Three Step Chicken
1. 2 thick skinless, boneless chicken breasts
2. 4 thin slices of boiled ham
3. 4 slices Swiss cheese

Preheat the oven to 375 degrees.  Spray a rimmed baking sheet with cooking spray ( I used a ceramic baking dish).

Carefully cut each chicken breast in half as though you were slicing a bagel.  Pound them heavily with a mallet to create thin cutlets.  Season with salt and pepper and place on the baking sheet several inches apart (Oops, I missed that step). 

Place a slice of ham on each piece of chicken then a slice of cheese on the ham.  Bake 12 minutes, or until the cheese is melted (but not running all over the pan).  I did finish ours under the broiler for a minute or two, I like toasty bubbly cheese!


I also made a cucumber vinaigrette salad.  The other night we had a Greek vegetarian dinner and I found a recipe for Greek style dressing here which I used on the cucumbers.

Add a crusty loaf of bread and you have an easy, yummy dinner!!

Taco Seasoning Mix

So recently I've been on a very restricted diet. There are many things I'm not eating, one of them being sugar.  I wanted to make chicken tacos for my family but the funny thing is, you can't find a seasoning packet that doesn't have sugar in it (at least not easily and not at your neighborhood grocery store.
I went on a search, an internet search and found a taco seasoning recipe via 
Taco Seasoning Mix
2 teaspoons 10mlInstant minced onion
1 teaspoon 5mlChili powder
1/2 teaspoon 2.5mlCrushed dried red pepper (I didn't have these, used some Cayenne)
1/4 teaspoon 1.3mlDried oregano
1 teaspoon 5mlSalt
1/2 teaspoon 2.5mlCornstarch (Can't have corn, didn't use)
1/2 teaspoon 2.5mlInstant minced garlic (Didn't have either, used garlic powder)
1/2 teaspoon 2.5mlGround cumin

Recipe Instructions

The ingredients above make about 2 Tablespoons of taco seasoning - enough for 1 lb. ground beef, or 8 - 10 tacos. Increase the amounts in proportion to make more. Combine all ingredients in a small bowl and blend well. Store the seasoning mix in an airtight container in a cool, dry place. Will keep for 6 months.
To Prepare Taco Filling:
Brown 1 lb lean ground beef in a medium skillet over medium-high heat; drain off the grease. Add 1/2 cup water and 2 Tablespoons of the seasoning mix. Reduce heat and simmer 10 minutes, stirring occasionally.


I made mine into a chicken taco salad.
